  • 4 c. Minute rice, cooked according to mfg. directions
  • 1 can Rotel ( diced tomatoes & chilis)
  • 5 - 1 in. slices of Velveeta cheese

Mix Rotel and cheese into the cooked rice.
Cook on low until cheese is melted; stir often.

Delicious And Easy Spanish Rice Recipe
A nice Spanish rice recipe....try this one !
  • 1 large onion chopped
  • 3 Tbs. of olive oil
  • 1 large garlic clove smashed
  • 1 1/2 cups raw long grain rice
  • ( even basmati works fine )
  • 1 28 oz can crushed tomatoes with liquid
  • or 28 oz can whole peeled tomatoes with liquid ( manual hand crush tomatoes )
  • 1 1/2 cups boiling water or chicken broth
  • salt and pepper, to taste
  • optional: 1 cup chopped green bell pepper
  • 1 small can of mushrooms drained
In a sauce pot, over medium heat, heat oil and cook onion ( bell pepper if using ) until wilted and soft and then briefly garlic.
Stir in raw rice and cook and stir until rice gets a pale tan color.
Add tomatoes with liquid, the boiling water ( or stock ) and bring to a boil,
Cover and simmer until rice has absorbed the liquid and is tender.(depending on the rice, you may have to add more water or stock.)
Stir in mushrooms if desired.
When tender, fluff with fork and Spanish rice recipe is ready to serve...enjoy it !

  • 1 cup uncooked regular rice
  • 1 medium onion, chopped (1/2 cup)
  • 2 tablespoons vegetable oil
  • 2 1/2 cups water
  • 1 can (8 ounces) tomato sauce
  • 1 small green bell pepper, chopped (1/2 cup)
  • 1 1/2 teaspoons salt
  • 3/4 teaspoon chili powder
  • 1/8 teaspoon garlic powder
Cook rice and onion in oil in 10-inch skillet over medium heat about 3 minutes, stirring occasionally, until rice is golden brown and onion is tender.
Stir in remaining ingredients.
Heat to boiling; reduce heat.
Cover and simmer about 30 minutes, stirring occasionally, until rice is tender. The Spanish rice recipe is ready....enjoy it !

  • 2 tablespoons olive oil (can use up to 1/4 cup)
  • 1 onion, chopped fine
  • 1 garlic clove, minced
  • 2 cups of medium or long-grain white rice
  • 3 cups* chicken stock (or vegetable stock if vegetarian)
  • 1 heaping tablespoon tomato paste or 1 cup of diced fresh or cooked tomatoes, strained
  • Pinch of oregano
  • 1 teaspoon salt
1 In a large skillet brown rice in olive oil, medium/high heat. Add onion and garlic. Cook onion rice mixture, stirring frequently, about 4 minutes, or until onions are softened.
2 In a separate sauce pan bring stock to a simmer. Add tomato sauce, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes, depending on the type of rice and the instructions on the rice package. Turn off heat and let sit for 5 minutes...and the Spanish rice recipe is ready to serve !
