SPANISH RICE AND BEAN BURRITO
Spanish Rice Recipe Ingredients:
  • 2 cups whole grain rice
  • 1 can spicy V8 Juice
  • 1 can chicken broth
  • 1 can green chilies
  • 1 can diced tomatoes w/ green chilies
  • 1 packet taco seasoning
  • 1 pouch precooked chicken breast
  • 1/2 onion diced
  • 1 can refried beans
  • 8 large flour tortillas
  • shredded cheese and sour cream to garnish
Spanish Rice Recipe Instructions:
Combine the chicken, tomatoes, green chilies, onion, and taco seasoning in a large pot. Add both cans of chicken broth and V8 Juice with the 2 cups of rice to the pot.
Prepare rice with the chicken broth and V8 juice as directed.
Bring mixture to boil, cover and lower heat. (Stir occasionally)
After 15 minutes, turn off heat; remove cover and let stand 5 minutes.
In each large tortilla, add 1/3 cup of refried beans and 3/4 cup of rice. Add sour cream and cheese, if desired. The spanish rice is ready to serve and makes about 8 burritos...enjoy it !

  • 2 tablespoons oil
  • 2 tablespoons chopped onion
  • 1 1/2 cups uncooked white rice
  • 2 cups chicken broth
  • 1 cup chunky salsa
Spanish Rice Recipe Instructions:

Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.

Spanish Rice Recipe Ingredients
  • 2 cups cooked ham cut into bite size pieces
  • 2 tablespoons olive oil
  • 1 medium white onion chopped
  • 1 red bell pepper seeded and diced
  • 1 yellow bell pepper seeded and diced
  • 3 stalks celery sliced thin
  • 6 cloves garlic coarsely chopped
  • 2 cans diced tomatoes including liquid
  • 1 tablespoon brown sugar
  • 2 bay leaves
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup red wine
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup chopped green olives
  • 3 tablespoons small capers with a few drops of their brine
  • 1 tablespoon chopped cilantro
  • 1 tablespoon chopped dill
  • 1 cup frozen okra pieces
  • 1 cup rice cooked
Spanish Rice Recipe Instructions

Heat olive oil in large skillet over medium heat.
When hot add onion, peppers, celery and garlic then sauté until tender but not browned.
Add all remaining ingredients except ham, okra and rice then reduce heat to simmer.
Simmer uncovered for 30 minutes then add okra and cook another 10 minutes.
Add ham and rice and cook 5 minutes more then stir well and serve immediately.
